Who inspired this cool idea?


Zach Johnson's Kids on Course youth visit every year to offer volunteer acts of service, taste test, enjoy a brief lesson plan about food insecurity and ways they make a humongous impact through volunteer math. Plus, get creative with sidewalk chalk spreading cheer for the community.


This year we have three groups which translates to about 40 volunteer hours. Over three one hour work sessions. Following a lesson. Then, fun trying fresh produce and a chalk and talk question and answer to top of the morning visits.


This helps community volunteers have time for other projects. Encourages youth for the effort they provided to help beautiful Peace Corner Community space.


For the 2026 visit are trying a pilot program of sharing a berry plant for interested students. Neighbor volunteers helped propagated from our garden the week prior. Students can take home for an indoor or outdoor space.


This blog is an attempt to support the after care of the berry plant. And, anyone who is a part of Peace Corner Community who would like to start their own berry garden for free.


We began in 2024 with 16 donated plants.


In 2025, Peace Corner Community berry garden propagated itself into many dozens.


In 2026, we have hundreds. Including: berries in accessible raised beds for elder and disabled. Another variety berry garden on the opposite side of Peace Corner. Smaller with a different type of June bearing strawberry. And, some beds have partner berry plants to add to accessibility and diverse spaces for more fruit to more people.


We are expanding the berry beds rather than have mulch. We partner summer plantings like pumpkin to bleed into the finished berry beds by July. Meaning the food grows in the unproductive spaces where fruit is not back until the following year. This partner planting helps us maximize the small space and provide more donations of produce.


Since we can not possible have enough berries for everyone is what this blog and a berry plant are all about for anyone who needs one or a few to get started.


If you are new here, welcome. If you have not browsed the website and are unfamiliar with our why the donation garden part of the Peace Corner Community heres our purpose:


The mission of the Wellington Heights Donation Community Garden is to bring people together to grow, cook, and share nourishing food, with the goals of cultivating community and alleviating hunger. (Inspiration from the Nashville Food Project).

Though we are not at the peak of our striving for this goal we are well on our way. The city water was installed this spring and the local association sponsors the small water bill seasonally. We are so appreciative of the city and association for this support.


We are working on ways to host a seed to table cooking show and recipes. A from the beginning goal. This blog is an informal kick off.


Create many high yield plants from your free plant. Enjoy a recipe for jam with only four ingredients. Learn to freeze for out of season treats.


We begin with reproduction. Below the method will include how to make babies. Depending on the space you have start with one berry plant at a time. Learn how to care for them. This variety goes crazy with growth within two years. So the blog also discusses how to manage the explosion of plants and maintain the garden for as long as you want fresh berries year round.


Whether picked or frozen to jam. We have the details below.


Yes, you can propagate strawberry runners in water and then transplant them to soil, but soil propagation while attached to the mother plant is generally more reliable for home gardeners


  • Rooting Speed: Roots develop faster in water (10–14 days) compared to soil (15–20 days). 

  • Transplant Risk: Water-rooted plants often suffer higher transplant shock (survival rate 50–65%) when moved to soil because their roots lack the established soil microbiome and structure.

  • Best Practice: For the highest survival rate (90%+), let the runner root in soil while still attached to the mother plant for 3–4 weeks, then snip the connection. 

  • Alternative: If using water, use clear containers to monitor growth, but be prepared to handle the new plant gently to minimize stress during the move to soil. Commercial hydroponic success relies on controlled nutrient solutions and aeration, which simple jar propagation lacks. 


How many runners per mother plant?


A single healthy strawberry mother plant can produce a highly variable number of runners depending on its variety, age, and growing conditions:


Potential vs. Recommended Yield


Maximum Potential: Under ideal conditions, a vigorous June-bearing plant can produce an astonishing 30 to 120 runners in a single season. 


 Some reports note up to 50 runners in just the first two months for specific varieties. Everbearing and day-neutral types generally produce significantly fewer runners, as their energy is directed toward continuous fruit production rather than vegetative spread. 


Recommended Limit: Despite their high potential, allowing a plant to support this many runners severely depletes the mother plant's energy, resulting in smaller fruits and weaker plants. Experts recommend limiting the number of rooted runners to 3 to 5 per mother plant for the first year. 


 A common best practice is to select the 4 strongest runners closest to the crown and remove the rest to ensure the new daughter plants are robust and the mother plant remains productive. 


Factors Influencing Production


The actual number of runners you see will depend on several key factors:

  • Variety: June-bearing varieties (e.g., 'Jewel', 'Honeoye') are prolific runners, while day-neutral varieties (e.g., 'Albion', 'Seascape') are more restrained. 

  • Plant Age: Young, established plants in their first or second year are the most vigorous producers. Productivity and runner output decline significantly after 3–4 years.

  • Environment: Long days (photoperiod) and temperatures between 60°F and 80°F (15°C–27°C) stimulate runner growth.


***High nitrogen fertilizer levels also promote excessive runner production at the expense of fruit. 


How to manage plants after harvest for future generations? Do we trim the leaves? How to keep berries producing often?


Post-harvest management is critical for ensuring a bountiful crop next year, but the specific steps depend entirely on whether you are growing June-bearing or Everbearing/ Day-neutral strawberries. 


1. Trimming and Pruning Leaves


Yes, you trim the leaves, but the method differs by variety: 


  • June-Bearing Varieties: These require a drastic "renovation" immediately after the final harvest (typically late June or July). You should mow or shear the foliage down to about 1 inch above the crowns.

  • This removes old, disease-prone leaves and encourages fresh, healthy regrowth that will form next year's flower buds. Crucial: Do not mow later than one week after the last harvest, or you risk destroying new leaf growth needed for winter survival. 

  • Everbearing & Day-Neutral Varieties: Do not mow these plants.

  • Since they fruit continuously until frost, mowing would remove developing flowers and fruit. Instead, practice selective pruning: individually snip off old, diseased, or yellowing leaves and remove spent flower stalks throughout the season. This maintains airflow without sacrificing the current crop. 


2. Managing Runners and Thinning


To keep berries producing often and maintain plant vigor, you must manage the "daughters":

  • Runner Control: Runners steal significant energy from fruit production. For Everbearing /Day-neutral plants, remove runners as soon as they appear unless you specifically need them for propagation.

  • For June-bearing plants, runners are managed during renovation by narrowing the rows. 

  • Thinning: Overcrowding leads to small berries and disease. After renovation (for June-bearers) or in late summer (for others), thin the plants so they are spaced 6 to 8 inches apart.

  • Remove the oldest, woody plants (older than 3 years) and keep the younger, vigorous rooted runners. A healthy plant should have no more than 4–6 crowns; too many crowns compete for resources and reduce fruit size. 


3. Fertilizing for Future Generations


Proper feeding rebuilds the plant's energy reserves for next year's fruit:

  • June-Bearing: Apply a balanced fertilizer (e.g., 10-10-10) or about 5 pounds per 100 feet of row immediately after renovation.

  • This supports the rapid regrowth of leaves and the development of flower buds in late summer/early fall. Avoid fertilizing in early spring, as this promotes excessive leafy growth and soft berries susceptible to rot. 

  • Everbearing/Day-Neutral: These heavy feeders need regular nutrition. Fertilize every 4 to 6 weeks during the growing season until about 4 weeks before the first expected frost.

  • Stop feeding in late autumn to prevent tender new growth that could be damaged by winter cold. 


4. Watering and Winter Prep


  • Irrigation: Continue watering throughout the summer and early autumn (about 1 inch per week).

  • This is vital because next year's flower buds are forming during this time. Drought stress now means fewer berries next year.

  • Winter Mulching: After the ground has frozen (usually late November), apply a 4–6 inch layer of straw or pine needles over the plants.

  • This prevents "frost heave" (where freezing and thawing push plants out of the soil) and protects the crowns from extreme cold. Remove the mulch in spring when new growth begins. 


By following these variety-specific steps, you can keep a strawberry patch productive for 4 to 5 years before needing to replant. 


The berries from Peace Corner are June Bearing. We are learning as we go. Hopefully this blog helps understand how to maintain a happy plant.

How to care for a potted strawberry plant for apartment folk? 


Caring for strawberry plants in an apartment requires managing limited soil volume and light exposure. Here is the essential guide for container success:


1. The Right Setup


  • Container: Choose a pot at least 10–12 inches in diameter and 8 inches deep with excellent drainage holes.

  •  Strawberries have shallow roots but need room to spread. Hanging baskets and "strawberry pots" work well for maximizing vertical space on balconies.

  • Soil Mix: Never use garden soil. Use a light, well-draining potting mix specifically for containers.

  • A DIY blend of 1/3 potting soil, 1/3 coconut coir (or peat moss), and 1/3 perlite is ideal. The soil must be slightly acidic (pH 5.5–6.5) to prevent nutrient lockout. 


2. Watering and Feeding


  • Watering: Containers dry out much faster than ground soil. Check moisture daily by sticking your finger an inch into the soil.

  • Water when it feels dry, ensuring water runs out the bottom. During hot summer days, you may need to water twice daily.

  • Avoid wetting the leaves or fruit to prevent rot.

  • Fertilizing: Strawberries are heavy feeders. Since frequent watering leaches nutrients from pots, apply a balanced liquid fertilizer (e.g., 10-10-10) every 3–4 weeks during the growing season.

  • Stop fertilizing about a month before the first expected frost to harden the plant for winter.


3. Light and Airflow


  • Sunlight: Plants need 6–8 hours of direct sun daily.

  • In an apartment, a south-facing balcony is best. If light is limited, rotate the pot every few days for even growth or supplement with a grow light. 

  • Airflow: Good circulation prevents fungal diseases like powdery mildew. Avoid crowding plants; limit a 12-inch pot to 3–4 plants


4. Winter Care for Apartments


Since you cannot bury pots in the ground, the roots are vulnerable to freezing:


  • Insulation: Move pots to an unheated garage, shed, or against a sheltered interior wall of the building.

  • Cluster pots together and pack straw, leaves, or bubble wraparound the sides to insulate the roots. 

  • Watering: Water sparingly in winter (once every 1–2 weeks) just enough to keep roots from desiccating, but never let them sit in frozen water. 

  • Indoors: If bringing plants inside a heated apartment, place them in the coolest spot possible (like a bright window sill away from radiators) to allow for a dormant period, which is crucial for next year's fruiting.


What does desiccating mean?


Desiccating means drying out thoroughly or removing moisture.


In the context of caring for potted strawberries over winter:

  • The Risk: Even when plants are dormant and not actively growing, their roots can desiccate (dry out and die) if the soil stays completely dry for too long, especially in windy or heated environments.

  • The Action: "Watering to prevent desiccation" means giving the plant just enough water to keep the roots slightly moist and alive, without soaking the soil or encouraging new growth.


It is essentially the difference between a plant going dormant (sleeping) and dying from thirst.


How to make strawberry jam?


Strawberry jam with berries, lemon juice, apple sauce, and sugar.


Here is a simple, reliable method to make strawberry jam using your specific ingredients: strawberries, lemon juice, applesauce, and sugar


In this recipe, the applesauce acts as a natural source of pectin (the thickening agent), allowing you to achieve a great set without commercial pectin products. 


The lemon juice adds necessary acid for safety and flavor balance.


Ingredients:

  • 4 cups fresh strawberries, hulled and crushed (about 2 lbs)

  • 1 cup unsweetened applesauce (provides natural pectin)

  • 3 cups granulated sugar (adjust to taste, but do not reduce too much if canning)

  • 2 tablespoons fresh lemon juice 


Instructions


1. Prepare the Fruit

Wash, hull, and crush the strawberry berries using a potato masher or food processor until you reach your desired consistency (chunky or smooth). Measure out 4 cups. 


2. Combine and Dissolve

In a large, deep stainless steel pot, combine the crushed strawberries, applesauce, lemon juice, and sugar


Stir well over medium heat until the sugar is completely dissolved. This prevents scorching later. 


3. Boil to Set

Bring the mixture to a full, rolling boil that cannot be stirred down. Boil hard, stirring frequently to prevent sticking, for about 20–30 minutes


  • The Test: To check if it's done, place a small plate in the freezer beforehand. Drop a teaspoon of hot jam onto the cold plate. If it wrinkles when you push it with your finger, it is ready. If it runs, keep boiling and test again every few minutes. 

  • Note: The jam will thicken further as it cools.


4. Jar and Store


  • Refrigerator/Freezer Jam: Skim off any foam from the top. Ladle the hot jam into clean jars. Let cool to room temperature, then seal and refrigerate (lasts ~3 weeks) or freeze (lasts ~6 months). 

  • Canned Jam (Shelf Stable): Ladle hot jam into sterilized jars, leaving ¼ inch headspace. Wipe rims, apply lids and rings, and process in a boiling water bath for 10 minutes.


    Remove and let cool for 24 hours.


How to freeze and deep bath plus can we put right in the fridge for use?


Here is the breakdown for freezing, water bath canning, and refrigerating your strawberry jam:


1. How to Freeze Strawberry Jam


Freezing is the easiest method and preserves the freshest flavor, especially for recipes using applesauce instead of commercial pectin.

  • Cool Completely: Let the jam cool to room temperature. 

  • Container Choice: Use plastic freezer containers or straight-sided glass jars (no "shoulders" that could crack as the jam expands).

  • Headspace is Critical: Leave at least ½ inch of headspace at the top of the container to allow for expansion.

  • If the jar is too full, it will break or pop the lid in the freezer.

  • Storage Time: Freeze immediately. It will keep for 6–12 months.

  • Thaw in the refrigerator before use.


2. Water Bath Canning (For Shelf Stability)


This method makes the jam shelf-stable (no refrigeration needed until opened) but requires precise steps to prevent spoilage.

  • Prep Jars: Wash jars and keep them hot (simmer in water) until ready to fill. 

  • Fill: Ladle hot jam into hot jars, leaving ¼ inch headspace.

  • Wipe rims clean with a damp cloth to ensure a seal. Apply lids and rings fingertip-tight.

  • Process: Lower jars into a boiling water bath canner. Ensure water covers jars by at least 1 inch

  • Time: Bring water back to a full rolling boil and process for 10 minutes (adjust for altitude if over 1,000 ft).

  • Cool: Turn off heat, let jars sit in water for 5 minutes, then remove to a towel-lined counter. Let cool undisturbed for 12–24 hours.

  • Listen for the "pop" indicating a seal.

  • Storage: Store sealed jars in a cool, dark place for up to 1 year


3. Can You Put It Right in the Fridge?


Yes, but with conditions:


  • Cool First: Do not put a pot of boiling hot jam directly into the fridge.

  • It raises the internal temperature of the refrigerator, potentially spoiling other foods. Let the jam cool on the counter until it is no longer steaming (warm to the touch is fine).

  • Shelf Life: Refrigerated jam (not canned) will last 3–4 weeks

  • Usage: This is the best method if you plan to eat the jam quickly. Simply ladle the cooled jam into clean jars, seal, and refrigerate. 


Summary:


  • Long-term (Pantry): Water Bath Can (10 mins). 

  • Long-term (Freezer): Freeze in proper containers (up to 1 year). 

  • Short-term: Refrigerate immediately after cooling (3–4 weeks).


When freezing Jam, once cool add to a quart size freezer bag. Do not use sandwich bags as they are not designed to maintain frozen food and the jam will not last. 


Gently remove air from bag by sealing most of the bag and deflating air inside then finish closing the bag. Lay flat. Distribute the jam so the bag is similar height throughout. Lay bags a cookie sheet and place in the freezer. A plastic shoe box is a perfect width. 


Once the bag is frozen it stores standing up in almost any space. 


When needed, leave in the fridge overnight. If you save old jam jars can add your homemade jam to repurposed Jars. Make sure they’re sterile meaning cleaned with boiling water to protect the jam from mold. 


If you make jam in ice cube trays can take smaller amounts to use. Or, break the iced jam in the bag. Keep in mind this may harm the bag. In this case you can add the quart size to a gallon freezer bag to protect the integrity of the jam until needed. Then repurpose the larger bag by rinsing and drying. 


Some people use plastic ball jar freeze containers as these can be repurposed. Though concerns about plastics may bother you. Glass made freezing is the best option. If it’s freezer safe and leave space, do not pack the jar, because frozen food expands. 


Be aware, if the glass is not freezer safe grade it can crack in the low temperatures.

We began with 16 donated plants (see pictures for 2024) and within one year filled our first garden to capacity. By year two, in 2026, we are overrun and learning, like you are, how to be better berry urban farmers. As we expand the strawberry field to fill more space. Adapting more gardens over making mulch paths.


Why? 


The strawberries are finished by July. When the rest of the food is going strong. This means instead of having mulch with no food we grow food and once the crop is concluded we make mulch of the leaves when we groom the field for next years. Our vining produce like melons and pumpkins have lots of room to sprawl out.
